8News Anchor Delaney Hall shares family recipe for lumpia

CHESTERFIELD COUNTY, Va. (WRIC) -- For 8News' Spirit of the Season series, 8News Anchor Delaney Hall is showing off a family favorite dish she cooks for the holidays, called lumpia. Lumpia is a popular Filipino dish that consists of cooked meat and vegetables wrapped in a thin pastry wrapper. It can be served as an appetizer or a snack. Below are the ingredients: 1 russet potato, diced 1 bag of green beans (frozen or fresh), cut into small pieces 3 bags of coleslaw 1 16 oz package of pork sausage frying oil of your choice (Delaney uses canola oil) soy sauce and pepper to taste 2 packages of 50 piece lumpia or egg roll wrappers First, cut your russet potato and green beans and combine. Set aside. Add olive oil to a Dutch oven or large pot and brown your pork sausage under medium heat. Add your potato and green mixture to pork sausage and stir for about five minutes. Slowly add soy sauce and pepper to taste, stirring constantly. Your potatoes will likely take about 10 minutes to cook. Slowly add the coleslaw half a bag at a time. Turn the heat to low. Once all of your coleslaw is combined, add soy sauce and pepper to taste, if needed. This can be as salty as you'd like -- measure with your heart! Once vegetables and meat are fully cooked, set aside mixture to drain. Next, set one tablespoon of mixture onto lumpia wrapper and roll. You may need two wrappers if they are thin. Once your lumpia is wrapped, heat up your cooking oil on medium/high. Fry each side of the lumpia for two minutes or until golden brown. Set aside to cool. Enjoy!
